Have A Go Recipe: Red pepper and lentil soup
Ingredients
1 vegetable stock cube
1 onion chopped into chunks
2 red peppers chopped into large chunks.
Optional – 1 clove of garlic or a pinch of cumin, 1 tin of tomatoes
200g of split red lentils
Roast the peppers and onion in the oven with the garlic with olive oil for about 20 mins.
Blitz the onion and peppers in a blender and add to a pan with vegetable stock.
Add the split red lentils and simmer for 30 mins
Or, you can blitz everything at same time.
Add salt and pepper to taste.
